34 degrees and can’t get my clubs: White/Black Bean Salad instead

Totally spaced about IVCC being closed on Tuesdays during the winter and left my clubs there on Sunday. So no golf today, nor filming any video. Not to mention its freezing out, so I’ll try again tomorrow.


Instead, I want to give props to my wife for concocting a very tasty White/Black Bean with mango and a lime & basil vinaigrette salad Sunday night. I only seared the scallops and shrimp. The bean salad was a great compliment to a solid standby. Nicely done.

White beans
Black beans (both drained and rinsed)
Lime zest
Juice of 1 lime
1 mango
Handful of fresh basil leaves finely chopped
Red bell pepper (diced)
Olive oil
White wine vinegar
Seared scallops and shrimp

Nice serving of bean salad on the plate with scallops/shrimp on top. Some fresh bread from a local Italian bakery and some Pinot Gris.


Hope some of you golfers are somewhere warm and enjoying playing without four layers of clothing…
