Grilled Scallops with Roasted Corn – Cilantro Salsa

We got a string of nice days last week before early March-like weather returned over the past few days, and I fired up the grill to make scallops.  Other than the roasting of the corn, this is a quick and easy meal to put together in under 30 minutes.  Makes me feel “summery”, even though its mid-April.

I brushed the corn lightly with melted butter and simply put the ears on the grill over low heat, turning occasionally for about 20 minutes.  Then I removed the corn off the cob into a large bowl and scraped off the cob to get a little more of the corn juice/flavor into the beginnings of the salsa.

I added one teaspoon of olive oil, a few squeezes of honey, a big helping of fresh cilantro (chopped), one jalapeno pepper (diced) along with salt and pepper and a dash of balsamic glaze.

I screwed up the scallops a little bit I think.  I rinsed/dried them, then made a mistake of coating lightly with olive oil and lemon juice.  I’m thinking this move cost me a good searing, but in the end, scallops on the grill do taste pretty good.  I just missed the good grill marks (I used a “seafood” grill pan with tiny little holes in it) and crusty texture I like. Live and learn, right? If anyone has a technique for getting a nice sear when grilling, please clue me in.

Plated up with a mixed green salad with a honey/herb vinaigrette.  There you have it.  Try this out, give it your own spin and let me know how it turns out!
